The whole thing worked out fantastically. I did not run out of food; I ate everything except the "just in case" dates. I had lots of energy, was plenty hydrated, did not crave sweet OR savory (had my nutrient needs filled), and very much enjoyed all of my meals. I also had plenty of opportunities to answer questions about why I eat this way, which was fun as well. :)
I will say that eating on a schedule (mealtimes in the dining room) as opposed to "when I feel like it" didn't feel as great to me, but I know I needed the extra calories for the active week. With more meals, more unpredictability, and more activity, I had more opportunities for blood sugar swings...which meant I was grateful to be wearing my CGMS and that I always had juice with me for lows. (I am also grateful to be at home to eat when I want to eat and not have to be in the bathroom so much due to the extra food!) :)
I stayed up very late the night before going, in order to get all my food/supplements prepared, but I felt it was well worth it. :)

P.S.- Here is the nutritional scale I mentioned in the video. It is incredibly helpful. Just turn it on, put the container on, zero it, and add the food. It will weigh it, then you can "choose food" and find the type of fruit it is, and scroll through to see the entire nutritional content. Extremely helpful for a diabetic or for anyone who wants to know what is in the food they are eating. :)
